Since 1989, more than 135 Americans have died and over 100 more have been seriously sickened by shellfish contaminated by Vibrio vulnificus bacteria.

(nats we hose them down here)

Cliff Hillman's family owned business is waging a war against Vibrio bacteria. Last year alone, Hillman's Seafood shipped 50 million Gulf coast oysters around the world. These days, Hellman's Seafood uses a procedure called Individual Quick Frozen technology to protect their precious commodity.

SOT: Cliff Hillman/Hillman's Seafood

Estacio Bridge: "Hillman also assigns a lot number to each container of oysters so if there's a problem, they can trace where the oyster came from."
But the Center for Science in the Public Interest or CSPI wants restaurants and the industry to do more to protect people.

SOT: Charlotte Kristin/CSPI

"Half the people who develop a blood infection from this bacteria die, making it one of the deadliest food borne illnesses."
The CSPI applauded one procedure called High pressure processing. Hillman, who also chairs the Texas Oyster Growers and Dealers Association says a cracking down on the industry is not necessary. He says millions consume oysters ever year without a problem. However if you are worried, simply ask for treated oysters, to ward off any potential problem. Te, CBS News, Houston))
