They are joining a movement to keep
certain animals off the dinner table.

(END SOT) (LOCATOR: BEIJING, CHINA)
Xu Quan is one China's top ten
chefs...but he's better known for what
he
won't cook... exotic animals.
(SOT: Chef Xu Quan, with Celia
translation)
It's unnecessary, he says. There's no
reason to eat rare animals when
other ingredients are available.
(STANDUP, Celia Hatton reporting,
Beijing)
Dishes that use wild animals - monkeys,
raccoons, even dolphins - are
still considered delicacies in China.
But now, there's growing
opposition when animals that are
usually seen on the pages of National
Geographic end up on the pages of a
menu.
For more than a decade, Chef Xu's staff
served wild mountain animals to
please demanding customers... but then
their boss had a change of
heart...
...he became a "Green Chef"... joining
forces with about 700 other
Chinese gourmets who refuse to cook
exotic fare.
But as China prospers... not everyone
agrees with the Green Chefs...
many newly wealthy are pushing
environmental concerns aside to try
shark fin soup ...and braised bear
paws. One reason....- the sweet taste
of prestige! says Canadian Embassy
Chef Nolan Ledarney.
(SOT: Celia and Nolan walking and
chatting)
Is it safe to say this is just food
that's meant to impress?
Absolutely, I think at the end of the
day, really, people aren't going
to eat it for the flavors or to enjoy
the textures. They're going to eat
it to say that they had it.
Green Chef Xu admits he's lost a few
customers over his beliefs, but
it's worth it to protect China's
environment.
(SOT: Chef Xu Quan, Celia narration)
Things are precious because they are
scarce, he explains.
He hopes appetites will change...before
animals now considered
exotic...become extinct.
Celia Hatton, CBS News, Beijing.
