A study in this month's Journal of the American Chemical Society finds the
kinds of food we eat can contribute to the problem.
Specifically, red meat like beef contains a form of iron that is more
easily absorbed by the body than the kind of iron found in fish and poultry.
Processed foods-- like fried chicken, degrade the iron, making it less
available to the body.
Recent trends away from eating beef can therefore contribute to iron
deficiency.
The researchers are also just the latest to suggest that drinking orange
juice can improve iron absorption.))
