AND THIS IS A RECIPE THAT ACTUALLY STEMS FROM MY ITALIAN BACKGROUND, AND IT'S A RECIPE THAT MY GRANDMOTHER AND MY MOTHER PASSED DOWN TO ME. And if you read the WDBJ cookbook, you know your grandmother grew up in a mountaintop village in Italy. THAT'S RIGHT, AND SHE PASSED ON A LOT OF RECIPES TO MY MOTHER AND FATHER. NOW THIS IS A TOMATO SAUCE. I'VE PUT IN SOME GARLIC AND SOME OLIVE OIL. PUT IN A CAN OF CRUSHED TOMATOS. ON TOP OF THAT, ADDED SOME SALT, PEPPER, OREGANO. A LITTLE FRESH BASIL FROM MY GARDEN THAT I GREW, DRIED OUT. Now it's time to get to the meat of it-- both literally and figuratively. THAT'S RIGHT, AND WHAT I LIKE TO DO, I'VE GOT SOME BONELESS CHICKEN BREAST THAT I'VE CHOPPED UP INTO CUBES LIKE THAT, AND WE'RE GOING TO ADD THIS, I ALSO LIKE TO ADD MY GREEN AND RED PEPPER AT THE SAME TIME, BECAUSE I LIKE THE GREEN PEPPER NOT TO GET TOO SOFT. SO THEN YOU STIR ALL OF THAT IN. ALSO IF YOU LIKE TO, PUT A SPLASH OF RED WINE INTO THE TOMATO SAUCE. IT MAKES IT TASTE A LITTLE BETTER, AND DON'T WORRY ABOUT THE ALCOHOL CONTENT. IT DOES IN FACT COOK OUT. This recipe isn't exactly like the one your grandmother made. THAT'S RIGHT, IT'S BEEN MODERNIZED OVER THE YEARS. AND ONE OF THE THINGS I LIKE ABOUT IT IS YOU CAN DO IT ALL IN THIS ONE ELECTRIC SKILLET. IT'S PRETTY EASY. That's easy for cleanup. How long do you want to let it simmer? YOU WANT TO LET IT SIMMER 20 MINUTES, EVEN AS LONG AS 30 WON'T HURT IT. Very Good, and we'll sit and listen to Frank Sinatra in the meantime? YOU SHOULD ALWAYS COOK WITH FRANK SINATRA, JERRY VALE IF YOU'RE IN A PINCH. It's 20 minutes later, and it smells wonderful, Patrick? I LIKE TO SERVE THIS OVER A LITTLE PASTA OR A LITTLE RICE, YOU NOTICE I'VE ADDED SOME BLACK OLIVES, YOU CAN ADD MUSHROOMS AS WELL IF YOU'D LIKE, AND I THINK IT'S A PRETTY GOOD LOOKING DISH-- As are you. Thank you very much, Andrew. ))

Roaring Run is no stranger to high water-- but forest officials say the walking bridges have proven they're built to last.

((BOB BOARDWINE/NEW CASTLE DIST. RANGER: THAT TELLS ME THAT WHOEVER LOCATED THEM THE FIRST TIME THEY WERE BUILT-- THEY'VE BEEN RE- BUILT AT LEAST ONCE, MAYBE TWICE, BUT ALWAYS BACK ON THE SAME STONE PIER. AND THEY'VE WEATHERED ALL THE FLOODS, '85, THEY STOOD TALL AND WE DIDN'T LOSE ANY BRIDGES. ))

But many of the large hemlock trees that surround the area haven't been as fortunate.
Boardwine says insect damage is the reason hikers will notice stumps in the place of trees.

SOT 11:46:22

((BOB BOARDWINE/NEW CASTLE DIST. RANGER: THEY'RE GOING TO SEE A LOT, LIKE WE SEE HERE, A LOT OF BIG HEMLOCK TREES THAT HAVE BEEN SAWED OFF. WE HAVE SMALL INSECTS CALLED A WOOLY ADELGA THAT ARE EATING THE NEEDLES OFF THE HEMLOCK TREES IN VIRGINIA RIGHT NOW. AND THE END RESULT IS THE TREES USUALLY END UP DYING. AND ALONG A HEAVY TRAVELLED TRAIL LIKE THIS, A DEAD TREE IS A REAL HAZARD. )) BUTT BUTT BUTT BUTT
SOT 11:47:04

((SO, WHEN THEY SEE THE CHUNKS OF LOGS LAYING IN THE CREEK AND BESIDE THE TRAIL, THAT'S WHAT IT IS. WE DIDN'T WANT TO-- WE DIDN'T HAVE ANY CHOICE, WE HAD TO CUT THEM.))

That still isn't enough to take away from the beauty of this stretch in the Jefferson National Forest.
While taking a stroll through the woods may not normally occur to you during the winter months, forest service officials say it SHOULD.

SOT 12:50:39

((DONNA WILSON/U.S. FOREST SERVICE: IT'S IDEAL FOR A WINTER OUTING. WE DON'T WANT TO HIBERNATE IN THE HOUSE OVER THE WINTER AND WE WANT TO WORK OFF SOME OF THOSE EXTRA POUNDS THAT WE PUT ON FOR THE HOLIDAYS.))
RUNS=:07

Roaring Run is open year- round to hikers--
Just make sure you dress in layers, and wear good walking shoes.

In other news from the forest service--
There is a five- dollar fee increase for seasonal day use permits at recreational sites in both the George Washington and Jefferson Natioanl Forests.
The 17 sites will now charge a fee of 25- dollars per vehicle, but now, there's now no charge for parking.
Officials say the increase is necessary to maintain fair competition among federal and private facilities.

Here's one of the things we're working on for six.
Shopping malls seem to be taking over the retail business.
But that may not be good news for folks wanting to start a small business.
We'll find out more tonight on news-7 at Six

Finally this morning -- Did you see that?
Some people whistle, some sing, some play a musical instrument.

But not many play their FACE.
This 43-year old Chinese electrician developed the muscles in his throat, tongue and mouth so they have a range of about 2- and ahalf octaves.
His work is paying off.
He'll perform for millions of people on China's National Television Station.
