Cooks must provide all ingredients for preparing a minimum of one gallon of chili on the day of competition and a camp-style stove for cooking.
According to the International Chili Society, chili consists of "any kind of meat or combination of meats cooked with chili peppers, various other spices and other ingredients." The exceptions are beans, rice and pasta products.
The winner will represent the state in the fall at the World Championship Chili Cookoff in California.
Entry fees are $25 for cooks with active membership in the ICS, which sanctions the state competition, and $50 for non-members.

The cookoff is coordinated by the Virginia Friends of Chili, a state ICS chapter of volunteers, and sponsored by Downtown Roanoke Inc.
