Richard J. Johnson, a native of Loudoun County, will begin his new job Nov. 1. Johnson has been with ARA Services since 1981, serving as director of dining services at four different campuses, most recently University of North Carolina-Greensboro.
He previously worked for the Marriott Corp. where his campus assignments included the State University of New York at Potsdam and Texas Christian University.
William E. Ryan III was hired this past summer as culinary services director and was to have started Sept. 1. But Tech officials said Ryan decided not to accept the job because of family considerations.
Johnson replaces John Engstrom, who resigned from Tech in April to start East Coast operations for the San Francisco-based Bon Appetit company.
Engstrom had been removed from the position in mid-December when an internal audit began after allegations of poor management practices and improprieties regarding overtime pay were leveled against the department.
The audit was released to Tech's Board of Visitors in August. A university spokesman said then that the culinary services department's problems included poor record-keeping, inadequate segregation of duties, inadequate policies and procedures and lack of management oversight.
The audit was forwarded to the state's auditor of public accounts and to the state police, but the university doesn't anticipate any criminal charges being filed.
