MAKE A QUICK GET-AWAY FROM THE KITCHEN

Here we are in the middle of "Get Organized Week," and according to experts, finding more time is both a major goal and benefit of getting better organized. Most cooks probably would settle for spending less time in the kitchen during any week. But they still want to turn out healthful, satisfying meals. Could they do it in 35 minutes maximum preparation and cooking time? You bet!

Savory Italian-style pork chop and chicken dinners, from the makers of Stove Top Stuffing Mix, combine prepared stuffing mixes with fresh and canned ingredients to create two rib-sticking favorites. Ground turkey and Heinz Salsa-Style Ketchup form the base for a spicy Tex-Mex supper, while ground beef and a rice/vermicelli mix make a quick Oriental-inspired dish. In a recipe from the Southeast United Dairy Industry Association, ham, broccoli and two kinds of cheeses bake up a macaroni meal that makes you go "mmmmm." Or, if you prefer, you can substitute tuna for the ham or even omit the meat altogether.

Finally, a versatile onion sauce base and recipes from the National Fisheries Institute allow cooks to take advantage of October's especially plentiful seafood supplies.

The institute predicts a particular abundance in the Southeast region this month of bluefish, farm-raised and wild clams, blue crabs, mullet, sea trout, tuna, stone crab claws, sea scallops, oysters, flounder, croker, cat fish and talipia.

Supplement your stove-top preparation with the use of your microwave oven.

Make mealtime preparation a fun, family affair with members sharing different responsibilities. You might even find enough time left over to whip up a quick and clever dessert, like the Ice Cream Tacos from the National Dairy Board, which, if you wish, you can make ahead of time, cover with plastic wrap or foil and freeze.
