COOKING SCHOOL HEADS SOUTH FOR NEW IDEAS AND TASTY RECIPES

Breads are baking. Beans are being shelled. And peaches are ripe for the picking. Experience these and all things Southern at the Southern Living Cooking School this spring in cities across the South.

The recipe for Southern hospitality that defines the region combines friends, family, fun and food. Simply add a dash of conversation laced with memories for a perfect gathering. According to Lisa Hogan, director of the Southern Living Cooking School, "Our 1994 theme, `Simply Southern,' encourages our attendees to entertain in the home, even to invite guests into the kitchen to help in the preparation process. The art of entertaining in the South encompasses everything from formal occasions to backyard barbecues."

In this faster-paced South, Southern cooks may find traditional dishes handed down from past generations too time consuming to fit into their hectic lifestyles. Hogan said using convenience products in a creative manner is characteristic of Cooking School recipes.

"We try to develop recipes that can fit into any situation," said Hogan. The home economists are exploring old traditions and developing innovative new ones to create a dining experience which includes recipes that are simply prepared and uniquely served.

In the two-hour program, the Cooking School will demonstrate easy and appetizing recipes that can only be described as Southern. "The South is a melting pot of nationalities where African, English, French, Southwestern and Native American influences are incorporated into our cuisine. Our show gives us an opportunity to share new ideas and techniques with fellow Southerners," says Hogan.

Back by popular demand, the "Kid's Cook" section in the show and cookbook continues its mission to cultivate culinary skills early. Not only does helping prepare meals instill a sense of confidence and responsibility in youngsters, it also gives Mom or Dad some needed assistance.
