LENT: A GOOD TIME FOR FISH

Meals during Lent - which begins today, Ash Wednesday, and lasts through April 2 - traditionally center on seafood. But those who do not observe the Christian penitential season still can reap the low-cholesterol, high-protein rewards of manna from the sea.

Cooks who are mystified or intimidated by the vast variety of fish and the market terms surrounding them - such as steak, whole or dressed - will find solutions and courage in nutrition expert Jane Kinderlehrer's ``Smart Fish: 101 Healthful Recipes for Main Courses, Soups and Salads.'' Kinderlehrer's recipes -including canned, frozen and inexpensive varieties - are steamed, poached, grilled, smoked, microwaved, healthy-fried, broiled, baked and never boring. There's no need to be.

Fish is flavorful, cooks fast and helps you stay fit. Make it a mealtime regular; don't just limit it to Lent.
