CRANBERRY SALAD: MIX IT, THEN ENJOY IT THE NEXT DAY

Here's an interesting CRANBERRY SALAD RECIPE by Peggy Wright, compliments of the Christiansburg Senior Center's Sherry Kostric, who's been publishing them each month. This one's not ready until the next day, so plan ahead if you try it.

First, combine a cup of medium ground cranberries; a half-stalk of celery, cut fine; a dash of salt; a cup of sugar; a teaspoon of lemon juice; and one box of strawberry gelatin. Mix and let stand for two hours.

Then, add a half-cup of chopped nuts plus 1 1/2 cups of hot water; mix and cool. Then, add a small can of shredded pineapple, pour into a mold and chill overnight. For a more brilliant red, touch it up with some food coloring before the final mix.

Registration and fees deadline for medal eligibility in the 1995 NEW RIVER VALLEY SENIOR OLYMPICS is Monday. Today, the monthly Dine Out Lunch Bunch visits Pargo's in Christiansburg. Free transportation leaves the center at 11:30 a.m., or diners may meet at the restaurant. Reservations by Friday. 961-1134.

Friday is movie day, noon-2 p.m.

The Silver Songsters meet Tuesday, 2 p.m.

CHRISTIANSBURG SENIOR CENTER, 655 Montgomery St. Sherry Kostric, 382-8173:

Friday, travel to Libby Hill Seafood, Salem. Transportation is $3 for seniors and leaves the National Guard Armory, College and Depot streets, at 10 a.m.

Monday, a lunch and slide show is set for 11:30 a.m. Participants bring a covered dish.

Registration ends Wednesday, March 1, for the breakfast trip to Roanoke. Transportation is $3 for seniors and leaves the armory at 8:30 a.m. Breakfast at the K&W and shopping at Tanglewood Mall.

Today, Christiansburg's two groups swap time slots: The morning group visits English Meadow at 1:30 p.m. for the birthday party. The afternoon group goes to SHARE at 10 a.m. and has lunch out.

Monday, the Shawsville group visits Heritage Hall at 2 p.m.

Tuesday, 2 p.m., the Warm Hearth group is the host of the Brook Meade birthday party.
