REMEMBERING THE '40S

Roughly 50 years ago, a pamphlet issued by General Mills and signed by "Betty Crocker" praised American women for their contributions to the war effort - for helping to strengthen the country's defenses as plane watchers, flyers, members of the armed forces and in Red Cross and Civilian Defense activities.

But, the pamphlet continued, the women were still first and foremost homemakers, and in that role their most formidable challenge would be on the homefront to safeguard their families' nutrition and prepare satisfying meals while still heeding the government's request to increase the use of available foods and save those that were scarse.
