WE DON'T KNOW WHO ELBETHEL IS, BUT WE LIKE HER PIE

Here's another Christiansburg Senior Center recipe readers might want to try. It's Virginia Webb's Elbethel Pie. You'll need:

2 eggs, separated

1/4 cup butter or margarine

1 cup sugar

1 teaspoon vinegar

1/4 teaspoon allspice (or other desired spices)

1/2 teaspoon cinnamon

1/2 cup pecans or walnuts

1/2 cup raisins.

Beat the egg yolks, then add butter, sugar, vinegar and spices and mix. Beat egg whites until fluffy, then fold them into the first mixture. Add raisins and nuts, pour into a deep-dish pie shell and bake at 350 degrees "until done," which Webb says is at least 45 minutes. "It'll brown on top like a pecan pie," she reports.

By the way, Webb doesn't know the origin of the pie's name. The recipe was her mother's.

July 11, an area-wide Retired and Senior Volunteer Program volunteer recognition picnic is set for Bisset Park, Radford, shelter 1, starting at 11 a.m. Lunch will be provided. Shelter No. 1. All RSVP members are welcome. Call 382-5775 by July 5 for reservations.

Register by Friday for the trip July 12 to Mercer Mall, W.Va. Transportation is free and leaves the center at 9 a.m. and returns at 2:45 p.m. Lunch is on your own.

The center is closed Tuesday to observe Independence Day.

Register by July 10 for the trip July 17 to visit Explore Park, Roanoke. Travelers should pack a lunch. Transportation is free and leaves the center at 9 a.m. and returns at 4 p.m. Admission to the park is $4.

CHRISTIANSBURG SENIOR CENTER, 655 Montgomery St. Sherry Kostric, 382-8173:

A mystery trip is Friday. Transportation for seniors is $3, and leaves the National Guard Armory, College and Depot streets, at 9 a.m.

The center is closed Tuesday to observe Independence Day.

Register by Monday for the punch quilting class that starts July 6, 6-8 p.m., at the Christiansburg Recreation Center, 95 College St.

Town residents, $6; non-residents, $11. Register at the rec center.

Travel July 7 to Back to Bob's in Rich Creek to pick blueberries. Transportation for seniors is $4 and leaves the armory at 8:30 a.m.

RETIRED AND SENIOR VOLUNTEER PROGRAM, 1 Franklin St., Courthouse Annex, Christiansburg. Victoria Scott, 382-5775:

Today, the Christiansburg group visits English Meadow at 1:30 p.m. for a birthday party; the afternoon group visits Meadowbrook at 2 p.m.

Thursday, it's the monthly cleanup. Participants should wear comfortable clothing. RSVP provides a brown bag lunch.

The RSVP office is closed Monday and Tuesday to observe Independence Day.

July 8, travel to the Salem Fair. The vans leave the Courthouse parking lot, 10:30 a.m. Lunch is on your at K&W cafeteria. Fair admission is free. Call RSVP for reservations.

RSVP needs canning jars, rings, lids and sugar for its apple butter jamboree later this year. For pickup, call 382-5775. Also, the group seeks yard sale items, including glassware, furniture, collectibles or clothing. Deliver items at the Montgomery County Courthouse annex weekdays, 8:30 a.m.-5 p.m.

RADFORD SENIOR CENTER, 27 First St. Mary Jane Harmon, 731-3634:

The walking group meets in the Radford Recreation Department gym Mondays, Wednesdays and Fridays, 9 a.m. Free. Sneakers only!

The center is closed Tuesday to observe Independence Day, but everyone's welcome at the gala July 4 celebration in Bisset Park, concluding with the fireworks display at sundown.

July 5, a free blood pressure screening is 10 a.m.-noon

July 7, travel to Fashion Outlet, Ryan's Steakhouse and New River Valley Mall, Christiansburg. The van leaves at 9:30 a.m. It's $2 for transportation.

GILES COUNTY SENIOR CENTER: 1320 Wenonah Ave., Pearisburg. Betty Letsinger, 921-3924:

The center is closed Monday and Tuesday to observe Independence Day.

Seniors swim for free every day, 11-11:45 a.m., weather permitting, in the Pearisburg town pool.

Schedule change: During June and July, the swim therapy program meets Mondays and Thursdays (except Monday, July 3). Transportation leaves the center at 1:15 p.m. for the Blacksburg Aquatic Center.

Flexible Fitness: The Arthritis Workout meets Thursdays, 1-1:30 p.m.

The nutrition program is Thursdays, 9 a.m.-1 p.m.

PULASKI SENIOR CENTER, 106 N. Washington Ave. Tina Faiszt, 980-1000:

The Dine 'Round Club has breakfast today at Country Kitchen in Christiansburg. Transportation leaves the center at 8:30 a.m.

The center will be closed Monday and Tuesday to observe Independence Day. Trip signup for July is Wednesday, July 5.

July 8, travel to Chateau Morrisette jazz concert. $12 includes transportation and admission. The van leaves at 10:30 a.m.

Senior Poetry Contest: The entry dealine is July 31 for New River Community College's 17th annual poetry contest for seniors age 60 and older. To be eligible, poems must be original, fewer than 60 lines, and never before published, and participants may submit up to three.
