SERIES EXPLORES SOME OF VA.'S UNIQUE RESTAURANTS

Virginia has long been known for a wealth of historic sites and a landscape that includes mountains, farmland and seashores.

Tucked among the traditional tourist attractions are scores of distinctive restaurants, known for their food, their atmosphere or perhaps for their great prices.

Virginia's daily newspapers and The Associated Press have worked together to bring you the stories of some of these restaurants in a series called ``Taste of Virginia.'' Starting today, the Roanoke Times will run the stories in the Wednesday Extra section, which already is devoted in good part to food.

The series explores some of Virginia's finest and most interesting restaurants, ranging from Cafe Albert at the renowned Homestead resort in Hot Springs to a combination restaurant-U.S. Marines museum called the Globe and Laurel in Northern Virginia.

We asked each of the participating restaurants to provide us with a recipe. These will be included. Each recipe was tested by members of the junior element of the Tidewater Chef's Association, American Culinary Federation and Johnson and Wales University College of Culinary Arts in Norfolk.

The restaurants included in this series by no means represent all of Virginia's noteworthy eateries. But each of the restaurants included in the series have some noteworthy feature that have made it a local favorite and perhaps an attraction for travelers and even celebrities.
