TASTY WAY TO RID YOURSELF OF TURKEY

Turkey be gone!

During the long week between Christmas and New Year's, there is always one question burning in my mind. Every year, I buy a bird that is bigger than my Christmas tree (or so it seems). Every year, I poke my head in the refrigerator and ask myself the same question out loud, "What are you going to do with all that leftover turkey?" Thanks to the Christiansburg Senior Center, I have (and now so do you) one more recipe to help solve the turkey problem:

Turkey casserole

2 cups cooked turkey (diced)

1 1/2 cups diced celery

2 cans of cream of chicken soup

1/2 cup water

2 tablespoons chopped onion

1 cup mayonnaise

1/4 stick margarine

1 1/2 cups bread crumbs

2 cups cooked egg noodles

Mix all ingredients except margarine and bread crumbs. Pour in baking dish. Mix bread crumbs with margarine, spread on top of diced turkey. Bake 45 minutes at 350 degrees.
