TOO HOT TO COOK

AS MUCH AS I like to spend time in the kitchen, I look for no-sweat cooking alternatives once summer heats up.

My duplex kitchen is small and the oven warms the area in short order. So I look for recipes using little or no cooking time.

Surface cooking on the range for 15 or 20 minutes is OK. I microwave as often as possible and pull out the small appliances: toaster oven, crock pot, table grill, electric fry pan, patio grill.

Here, I'm sharing a handful of recipes for saving time and staying cool. They'll add variety to mealtime, without a lot of fire and fuss.

These recipes use ingredients that are readily available, that cook quickly or that are combined without cooking.

Because I also dislike clean-up, especially in summer, some of these foods can be placed on one platter and cooked together in the microwave. The stir-fries and skillet meals included here also help keep clean-up at a minimum.
