HERE'S CHANCE TO SEE HOW GREAT CHEFS DO IT

GREAT CHEFS of Hampton Roads, Homearama's annual series of cooking demonstrations featuring local chefs, celebrates its 10th year this month.

And once again, the program will feature some of Hampton Roads' favorite ingredients in new ways.

The demonstrations will be from noon to 3 p.m. Oct. 20 at the Homearama site in the Church Point neighborhood of Virginia Beach. Also, from 5 to 7 p.m. Oct. 13, firehouse cooks will compete in the Three-alarm Firehouse Cooking Contest.

Demonstrations and samplings of the dishes are included in the $6 Homearama ticket. For more information, call the Tidewater Builders Association at 420-2434.

Following are some recipes from previous Great Chefs of Hampton Roads demonstrations.

New from Godiva

Godiva Chocolatier has introduced Caramel Nut Bouchees. Translation: Godiva is making an upscale version of Turtles.

Yes, the exclusive Belgian chocolate company is trying to bring ordinary chocolate-caramel combinations to new heights. Caramel Nut Bouchees come in three flavor combinations: chocolate caramel and hazelnuts covered in dark chocolate; vanilla caramel and pecans covered in milk chocolate; and raspberry caramel and cashews covered in white chocolate.

The new candies cost $27 per pound, about the same price as other Godiva chocolates. Look for them in department stores and specialty shops.

Spreading the word

Don't switch to butter, says Ann Hertzler, Virginia Cooperative Extension nutritionist at Virginia Tech.

Even though margarine contains trans fatty acids, which may contribute to heart disease, it is still a better choice than butter, which is high in saturated fats and cholesterol, Hertzler says.

The best choice, she says, may be soft margarines or spreads, which usually are lower in trans-fatty acids than are stick margarines.

The American Heart Association recommends buying margarine with no more than 2 grams of fat per tablespoon. MEMO: More Morsels/F1
