PORK, ``the other white meat,'' is becoming leaner.
Smithfield Foods Inc. has introduced Lean Generation Pork, a meat containing less fat than traditional pork.
Cuts of Lean Generation Pork have no more than 10 percent fat by weight, says Jim Schloss, vice president of marketing at Smithfield Foods.
A 1-ounce piece of pork loin contains about 24 percent fat, according to the Encyclopedia of Food Values by Corinne T. Netzer (Dell, 1992).
But fat makes meat tender and juicy, so consumers will have to cook Lean Generation differently.
``This meat cooks like veal or a fine seafood,'' Schloss says, ``and we're going to have to educate consumers on how to properly prepare it.''
You can't buy Lean Generation in the grocery store. Yet.
``We're going to take our time bringing it to market,'' Schloss says. He expects Lean Generation pork to go to grocery stores sometime this year.
In the meantime, the meat is served at several area restaurants, including Bistro, Fellini's, Magnolia Steak and Wilma's Chili Parlor in Norfolk; Mahi-Mah's and Five-01 City Grill in Virginia Beach; and Smithfield Station in Smithfield. ILLUSTRATION: Color photo
