GOTCHA, Easter bunny.
We see you squirreling away those jellybeans and chocolate eggs so you can pig out on Easter Sunday.
And we know that you're thinking: ``I'll get back to that carrot-stick diet the morning after. I promise I will.''
Bad move, rabbit. Nobody does the feast-and-famine bit anymore. You need a lesson in holiday dining, '90s style. So tilt those big ears this way, Bugs, and listen closely.
Yes, you can indulge in some candy on your special day, with the blessing of the nutrition experts. If you hadn't been living in a cabbage patch for so
long, you would know that abstinence is out, moderation is in.
You may also sit down to a fine holiday meal - with foods that are satisfying and full of flavor but low in fat and calories. After you hippity-hop for joy, take a look at our menu. Rich in traditional favorites, this meal includes appetizer, rolls and a lavish dessert.
If you help yourself to two appetizers, one roll and a sensible serving of each of the remaining dishes, you will consume about 1,064 calories and 33 grams of fat. About 28 percent of your calories will come from fat. You can reduce all three numbers even more if you substitute nonfat dressing for the one used here.
Much contemporary nutritional advice has been applied to this menu. For example:
The meal uses and abundance of vegetables, fruits and grains.
A modest portion of lean red meat - 4 ounces per person - is used. (Nonmeat eaters likely will be satisfied with a kebab of vegetables served atop the orzo with peas.)
In traditional dishes, fat has been reduced significantly. The deviled egg-filling in the pita appetizers and the strawberry shortcake dessert are examples.
Got the message, bunny? In an egghell, there is a wide middle-of-the-road between the carrot-stick diet and the chocolate binge.
Enjoy. ILLUSTRATION: Color photo
